Messiah Lutheran is well known in the area for hosting some of the best potluck and meal events in the area.  We've continue to have requests for recipes from people attending our events.  If you have a recipe request or if you would like us to add one of your favorite recipes to share, drop it off at the church office or send us an email to the email address on the bottom of the page.  Enjoy!


Wake Up Casserole

Preheat oven to 350 degrees

8 frozen hash brown patties
4 cups shredded cheddar cheese
1 pound cooked ham (cubed)
7 eggs
1 cup of milk
½ tsp. salt
½ tsp ground mustard

Preheat oven to 350 degrees.  Grease a 9 x 13 baking pan.  Arrange hash brown patties on the prepared dish.  Sprinkle cheddar cheese and ham over patties.
Beat eggs, milk, salt and mustard in a large bowl using a whisk; pour over ham.  Cover baking dish with foil
Bake in preheated oven for 1 hour.  Remove foil and bake until edges are golden brown and a knife in the center comes out clean…about 15 minutes more.

Egg & Spinach Casserole

6 eggs beaten

¾ cup onions
¼ cup flour
10 oz. frozen spinach – drained

16 oz. cottage cheese
16 oz. cheddar cheese
¼ cup melted butter
Salt & Pepper

Beat eggs with onion and flour until smooth.  Bake in oiled 9 x 13 pan 45 minutes.


Cheddar Bacon Dip

16 oz. sour cream
1 packet Ranch dressing mix
3 oz. bacon bits (in the bag not jar)
1 cup shredded cheddar cheese

Mix together and refrigerate 24 hours. Serve with chips and/or
veggies.

Shortcake

4 cups of flour
2 tablespoons baking powder
1 teaspoon of salt
4 tablespoons sugar
1 cup lard (has to be lard)
Fold in as pie crust
Add 1 ½ cups of milk and 2 eggs
Mix with fork, put in 9 x 13 pan
Bake at 400 degrees for ½ hour
Serve with strawberries and whipped cream

Grape Salad

2 cups sliced green grapes
2 cups sliced red grapes
1/2 cup chopped pecans
1 8 oz. cream cheese
8 oz. sour cream
1/2 cup of sugar
1 tsp. vanilla

Beat cream cheese, sour cream, sugar and vanilla until smooth.  Fold in grapes and pecans, sprinkle brown sugar on top before serving

Egg, Hash Brown Sausage Bake

2 lbs. hot breakfast sausage
1 (30-32 oz.) bag frozen hash browns
1 tsp. salt
½ tsp. pepper
¼ tsp. garlic powder
¼ tsp onion powder
2 cups shredded cheese
8 eggs 2 cups milk

(I add 1 medium chopped onion to mine instead of the onion powder)

Preheat oven to 350 degrees.
In a large skillet cook sausage until no longer pink.  Drain fat.
Place hash browns in the bottom of lightly greased 9 x 13pan.  Top with sausage and cheese.
Whisk together eggs, salt, pepper, garlic powder, onion powder and milk.  Pour over hash brown mixture.
(cover and refrigerate if cooking later).

Bake for 35 to 40 minutes uncovered.  It may take a bit longer.

Keto Cauliflower Mac and Cheese
​
This keto cauliflower mac and cheese is the PERFECT side dish for dinner!  It’s creamy, savory and makes a perfect low carb cauliflower mac and cheese.  You will LOVE this delicious keto cauliflower recipe!
Prep Time – 10 minutes    Cook Time – 30 minutes    Total time – 40 minutes    Yield – 4 people
 
INGREDIENTS
  • 1 large head of cauliflower
  • 1 cup heavy whipping cream
  • 3 ounces of cream cheese
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 cup cheddar cheese
  • ½ cup mozzarella cheese
  • ¼ cup parmesan cheese
  • Salt and pepper to taste
 
INSTRUCTIONS

1.  Preheat the oven to 375 degrees and then prepare baking dish with cooking spray.
2.  Cut a head of cauliflower into florets.  Steam or boil for approximately 5 minutes, until they are crisp and tender.  Strain the cauliflower and put it in your baking dish then add salt and pepper to taste.
3.  In a skillet over medium-high heat, add heavy whipping cream and bring it to a simmering boil.  Whisk in garlic powder, onion powder, and salt and pepper to taste.
4.  Add cream cheese and stir until smooth, and then add cheddar cheese.  Sprinkle in mozzarella cheese and stir until cheese sauce thickens.
5.  Pour the cheese sauce over the top of the cauliflower in the baking dish and stir to coat the cauliflower in the cheese sauce.  Sprinkle parmesan cheese over the top of the cauliflower.
6.  Bake for 15-20 minutes, or until the mixture is browned on top and bubbly.  For a more browned appearance, cook in broiler for the last few minutes.  Serve and enjoy!

Angel’s Egg Bake

Ham, sausage, bacon, salsa, eggs, red pepper, yellow pepper, green pepper, onion, mushrooms, tomatoes, Colby jack and mozzarella cheese, Mrs. Dash, garlic salt, onion salt, lowry seasoning salt, pepper.

I made it with no recipe, so I’m sorry that I don’t have a recipe to share.  But here are the ingredients.


Sweet Sauerkraut Meatballs

1 jar Heinz chili sauce
1 large can sauerkraut drained
½ cup brown sugar
1 can jellied cranberries
Stir together and pour over 2-3 dozen meatballs (or one package of frozen meatballs)
Bake one hour at 350 degrees
Lovely, substantial, and delicious!

Green Chili Chicken Casserole

1    Chicken, cooked and removed from the bone.  If I'm feeling lazy, I buy a cooked rotisserie chicken.  Tear the chicken into bite size pieces.
2    Cans Cream of Chicken soup
1    16 oz Sour Cream
1    Small can diced green chilies (4 oz.)
1    Teaspoon diced jalapeno peppers (more or less to taste)
8 to 10 medium size tortilla’s (flour or corn.  I prefer flour.  Tear into
pieces.)
2    Cups Grated Mild or Sharp Cheddar Cheese or Longhorn Cheese

Preheat oven to 350 degrees.

In a large bowl, mix soup, sour cream, diced chilies and peppers.  In a 9 x 13 baking pan layer ingredients.  Start with soup mixture and layer chicken, torn up tortillas and cheese. Repeat.  End with soup
mixture and cheese.  
 
Bake at 350 degrees for 45 minutes or until it bubbles
and starts to brown a bit around the edges.

Zucchini Cake

A carrot cake mix makes this a quick and easy cake to prepare and bake.  Frost this cake with cream cheese icing or dust with powdered sugar.

Ingredients:
1/3 cup vegetable oil, such as canola oil, corn oil or safflower oil
4 large eggs
1 can (8 ounces) crushed pineapple with juice, undrained
1 box (18 ounces) carrot cake mix with pudding in the mix
1 medium zucchini, unpeeled, grated about 1 1/2 cups grated.
1 cup chopped pecans
1/2 cup flaked coconut, optional

Preparation:
Heat oven to 350 degrees.  Grease and flour a 9 x 13- 2inch or 10-inche round baking pan.
With an electric mixer, beat oil and eggs together.  Beat in the pineapple with juice and the cake mix.  Stir in the zucchini, nuts and coconut, if using.
Bake for 45 to 50 minutes, or until the cake bounces back when touched lightly with a finger.

Overnight Country Sausage and Hash Brown Casserole

1 package (16 oz) bulk hot pork sausage
10 eggs
1 ½ cups milk
2 teaspoons Dijon mustard
1 bag (20 oz) refrigerated hash browns (about 4 ½ cups)
1 ½ cups shredded sharp cheddar cheese (6 oz)

1.  Spray 13x9 (3 quart) baking dish with cooking spray.  In 8-inch skillet, cook sausage over medium heat 5 to 7 minutes or until no longer pink, drain.
2. In a large bowl, beat eggs, milk, Dijon mustard and pepper with whisk until mixed well.  Stir in hash browns, 1 cup of the cheese and the cooked sausage.  Pour mixture in baking dish; cover and refrigerate at least 8 hours but no longer than 12 hours.
Heat oven to 350 degrees F.  Remove dish from refrigerator, uncover and top with remaining ½ cup cheese.  Bake 45 to 55 minutes or until center is just set.  Cool 10 minutes before serving

Sue Grube’s Cheese Tarts
(served at coffee fellowship on July 17!)

2 cups all-purpose flour
1 cup butter
1 cup small-curd cottage cheese
Desired jam, preserve or marmalade
Powdered Sugar Icing

In a large mixing bowl, cut together the flour, butter and cottage cheese till the  mixture clings together.  Form the mixture into a ball.
On a floured surface, roll out dough to form a 12 x 10-inch rectangle.  Starting with a short end, fold in half.  Repeat rolling out and folding 4 more times.
Roll out dough so that it forms a 15 x 11-inch rectangle.  Using a diamond-shaped cutter (about 3 and a half by 2 and a half inches), cut out cookies and place on lightly greased cookie sheets.  Press indentation in each; spoon in a quarter teaspoon jam.
Bake in 400 degree oven about 15 minutes.  Remove; cool on wire tacks.  Drizzle with icing.  Makes 36 cookies            
Powdered Sugar Icing:  Combine 1 cup sifted powdered sugar and water (1 to 2 tablespoons) for a drizzle.
